my office has been turned into a guest room for the time being…

The excuses are many

But the result is the same:

I havent been writing on my book for weeks!!

Not that I have writers block or anything…

I just haven’t prioritized it..

Been postponing and postponing….

Its like when I have taken a too long vacation from exercising and gain a few to many ponds;

«Ill start eating healthy and exercise on monday again»

Then comes monday, but it turns out that we have been invited to a party on Wednesday….there will of course be cakes….

No sense in starting a healthier lifestyle before that

And then Wednesday has past, but now the weekend is coming up pretty soon….

Nobody starts a diet on a weekend???

No better just wait until the next monday…

Some times I postpone projects like that for weeks….fool my self with different excuses….

Until I finally pull myself together and go «all in»

Thats were I am at with my writing right now…

Deadline is coming up and I have to get back to writing my book

I want to

This monday it is going to happen!!

I will get back to exercising, healthier nutrition and writing every day!!

So today I got up early ( 05.15)

trained for 30 minutes

walked the dogs

and wrote this blog

And tonight I have  planned to write for 1 hour on my book

Me a gourmet chef????

NOT!!

Cooking dinner has always been a necessary evil for me….

Yes, I do realized that with my former post about boikotting ironing and not being any good at needlework I seem to be an awful wife material… BUT luckily I already have a boyfriend that loves me with all my short comings…

And thats not all! HE actually loves cooking and is very interested in food…

He watches every food program and his favorites are:  Masterchef USA, Masterchef, England, Masterchef Australia, Masterchef New Sealand….

Incredible boring programs if you ask me…. but there are som benefits 🙂

He cooks practically all our dinners!

«I love cooking dinner together» he says in the weekends.

And I totally agree – because when we «make dinner together». He is cooking and I am on a chair, enjoying the view of my gorgeous man, drinking my wine ❤

With my boyfriends permission, I am sharing one of his recipes today. This is one of my favorites and it is for 2 persons. ( you may multiply for more people

Tom Yum suppe ala Jan Andreas ❤

5 Kaffir lime leafs

5 slices of galangal root

2 lemon gras cut in three 3

1-2 tea spoons of  Tom Yum paste (depends on how spicy you like it)

1-2 tea spoons of chilli paste (depends on how spicy you like it)

couple of drops of fish-sause ( a lot of taste so dont use to much!)

1-2 chicken bouillon

1 carrot in slices

1 onion cut in medium bits

optionally cherry tomatoes

2 cans of coconut milk

Chicken already fried in a pan, or Scampi or fish – whatever you like.

This is how you do

  • boil 1 1/2 cup of water with the kaffir lime leafs, galangal root, lemongrass, carrot, onion and chicken bouillon  – make sure all the bouillon has been dissolved.
  • Add the tom yum paste and the chilli paste and cook it until it is all  mixed in.
  • Add the coconut milk and bring to a boil  – add a few drops of fish saus ( dont use to much, it is very strong on taste!)

At the end add chicken, scampi or fish as you like. Right before serving so it doesn’t get chewy 🙂

Taste marvelous with focaccia bread or garlic bread on the side.

Middagslaging for meg har alltid bare vært et nødvendig onde…

Jada, jeg innser at jeg med tidligere blogg innlegg om stryke-fobi og total mangel på håndarbeids evner- fremstår jeg som et elendig koneemne…. MEN jeg er så heldig at jeg allerede har en kjæreste som elsker meg på tross av mine mangler….

Og ikke nok med det! HAN er veldig opptatt av matlaging og mat….

Han ser ALT av mat programmer på tv.  Og favoritten er Masterchef USA, Masterchef, England, Masterchef Australia, Masterchef New Sealand….

Utrolig kjedelige programmer spør du meg… men det har sin avkastning 🙂

Han lager bortimot alle middagene her i huset 🙂

Jeg er helt enig – for når vi «lager mat sammen» står han med pannene mens jeg sitter på en stol, nyter utsikten av min flotte mann mens jeg drikker vin ❤

5 Kaffirlime blad

5 skiver med galangalrot

2 sitrongress som kuttes i 3 biter hver

(alle disse ingrediensene får du på global food eller andre innvandrerbutikker. Vi kjøper større mengder og fryser alt i små poser)

1-2 ts Tom Yum pasta ( alt etter hvor sterk man ønsker den)

1-2 ts chillipasta (alt etter hvor sterk man ønsker den)

Noen dråper fiskesaus

1-2 kyllingbuljong

1 gulrot i skiver

1 løk kuttet opp i passe biter

evt cherrytomater

2 bokser med kokosmelk

Kylling stekt i panne først, Scampi eller fisk etter ønske

Dette gjør du;

  • Kok opp 3 dl vann, kaffirlime blader, galangalrot, sitrongress, gulrot, løk og kyllingbuljong – kok til kyllingbuljong er oppløst.
  • Tilsett tom yum pasta og chillipasta og kok opp til dette er blandet ut
  • Ha i kokkosmelk og kok opp – smak til med fiskesaus ( denne er sterk på smak så ikke ta for mye! prøv med dråpe for dråpe

Helt på slutten ha i fisk – kylling eller scampi

Deilig med focaccia eller hvitløks-baguetter
